Choosing the right type for you
- Mostly cheese fondue: a heavy enamelled cast-iron or ceramic caquelon holds gentle, even heat and is forgiving. A traditional burner is fine.
- Cheese and chocolate, or you want it simple: an electric pot with adjustable temperature is the most controllable and the safest indoors.
- Hot oil or broth (meat fondue): use a metal pot (cast iron or stainless) rated for high heat — never ceramic.
- Dessert for two: a small tealight or ceramic chocolate pot is inexpensive and enough.
- Outdoors: look for a wind guard and a stable, wide base.
